I don't know about 3 hour games ... but controlling time in tournaments is a factor when you've contracted use of an area for a limited span of time and need to play out a certain series of games before the final.
I've found a fair solution:
Setting time limits for games.
1 vs. 1 games usually play faster than 3 vs. 3 games - so adjust the maximum spans accordingly... 45 minutes maximum for triplettes, with a 10 minute warning tone (whistle) at 35 minutes. Upon reaching 45 minutes, the tone is again sounded - whereupon, if an end is begun - then it is permittd to be completed. The score is then adjusted to 13 points.
Meaning: if the 45 minute tone is sounded, and Team-A has 10 points and Team-B has 9 points, then Team-A is promoted to 13 points (10+3) and Team-B is promoted to 12 points (9+3). This is to keep the scorekeeping tally sane!
If the scores are even at the 45 minute tone, then a coin toss gives 1 team 13 and the other, 12.
If you do not set time limits, then it is likely that at least 2 other teams will be waiting to play - and as everyone knows - when running a tournament, you don't want anyone waiting.
