IMHO, the final score should be decided by a fair competition, not by a coin toss.

You should be always allowed to play an additional round if the scores are even at the end of limited time. This is the only fair solution (and widely used). Pointing to the cochonet? How about shooting? Only an actual game can measure teams skills - pointing, shooting and tactics.
One more thing - if limitting time I would rather recomend 60 minutes for triplettes, 45 for doublettes and 30 for tete-a-tete.
